Cautions and warnings:
Do not use pure essential oils. Essential oils are diluted in a vegetable oil when applied to the skin. Carry out a skin tolerance test in the crook of your elbow and wait 48 hours before using the oil on the skin. Do not use the essential oil if you notice a reaction such as redness, itching or stinging.

Its absolute is extracted from Cocoa seeds by solvent.

You can use cocoa extract in desserts, fancy coffees or even add to a massage oil with aphrodisiac, euphoric and tonic effects.

Le cacaoyer est un petit arbre originaire de l'Amérique centrale et équatoriale.

Les fruits (les cabosses) se forment directement sur le tronc et les grosses branches.

Ce sont des fruits qui ne peuvent pas s'ouvrir tous seules, ils doivent pourrir pour libérer leurs précieuses graines ou être ouverts à la main par les producteurs de cacao.

La parois des fruits est épaisse et jaune à maturité, le fruit contient de 20 à 40 graines.

Les graines, à la récolte, sont enduites d'un mucus blanchâtre, elle sont acidulées, inodores et un peu amères.

 

Pour produite le cacao qui va être destiné à fabriquer le chocolat, il faut faire fermenter les graines quelques jours puis les sécher à l'abris du soleil et de la pluie.

S'en suivra ensuite un long processus de transformation (torréfaction, conchage, etc etc) pour arriver à fabriquer du délicieux chocolat.

 

Pour faire du beurre de cacao, le processus est plus simple mais tout aussi délicat.

Là-aussi, les fèves de cacao (les graines) sont fermentées et séchées, puis elles sont cassées et on extrait l'amande des graines qui va être légèrement chauffée pour être stérilisée, puis torréfiée et broyée pour obtenir une pâte de cacao liquide.

La matière grasse est extraite de la pâte de cacao par un procédé à haute pression (jusqu’à 550 kg/cm2).

Le beurre est ensuite filtré pour retirer les derniers éléments solides du cacao.

La graine contient entre 54 et 58% de graisse en moyenne.
